Peanut Butter Energy Bites! (No baking required)

Since we have a full fridge and kitchen cabinets again, I found myself in the mood to make a little something.  One thing that’s been on my mental to-do list for a long, long time now is ‘no bake energy bites’.  Since I now had all the ingredients I needed, I hopped-to in the kitchen.

I jumped on to Pinterest to find the original recipe I had pinned a long time ago.  The original is from the awesome blog ‘Gimme some oven’ .  I amended the recipe a little, but you can find the original here.

Peanut Butter Energy Bites!

Yields approx 15-20 bites, depending on size.  

What You Need;

1 Cup dry Oats (I used old fashioned gluten free)

1/2 Cup of Peanut Butter

1/2 Cup of Wheat Germ

1/2 Cup of Chocolate Chips

1/2 Cup of Chopped Walnuts

1/3 Cup of Honey

The Mixin’s

What You Do;

Pop all ingredients into a medium sized bowl.

Stir together until well combined.

Cover and place in the refrigerator for at least half an hour to chill.

Remove from the fridge and roll into balls (the size is up to you!).

Place in an airtight container and store in the refrigerator for up to a week.

I think these little bites will be great for a snack, incorporated into breakfast or even a little dessert.  The best part of these is that you can play around with the ingredients as much as you like!
